I've always found social jiujitsu works well on the cops. We've got a slightly different set of rights here in Canada, but the police culture is also far less paramilitary and aggressive than American cops seem to be (both in my limited experiences with them, and as the American news reports). I generally try to identify likely reasons they're talking to me and then eliminate those reasons. For example, when I get stopped by a cop and I'm smoking something, I always hold the cigarette out for presentation and say "Don't worry, it's just a cigarette, officer," with a slightly apologetic grin. That seems to calm them down a bit - the idea that I'm willing to co-operate with them (whether I am or not) and I just go from there, expediting whatever they're trying to do while convincing them that this is probably just a waste of their time.
